Updating and Tumblr and Updating Tumblr

After much trial and tribulation I have successfully connected my WordPress account to my tumblr account. Well, one of my tumblr accounts. I have a lot of them because I like to keep my interests separated and I’m too lazy to use tags. I linked this one to my fitness motivation tumblr and now you can see it on the side bar! I found out that you can pretty much only see pictures and the text only posts don’t show up so well so I’ll probably stick to tumbling only pictures on that blog from now on.

I wanted to connect to my tumblr because I find a lot of things on there that I like but not enough to actually write about, especially since pretty much everything on tumblr has already been written about and that’s kind of the point- sharing it. So now with it sitting happily in my sidebar I can share it with you! This will have a lot of different things in it from good food to good recipes to good exercise to good quotes. There’s just a lot of good in it, kind of like what I hope your life is full of right now.

In terms of clean eating I’ve been doing great! A lot of people like to make new year resolutions but I really don’t like to do that. I think it’s always a good time to change yourself, and I also think not being able to achieve your resolutions puts a lot of people down and makes it harder to complete them. I think there’s also the problem of people dropping their resolutions once they achieve them, kind of like when people go on a diet bu gain the weight back as soon as they drop it. Significant health and self changes are something that you need to always work toward, and not just do it for a couple months and then decide that’s good enough. I do think New Years Resolutions are a good place for come people to finally jump into what they’ve been trying to do for a long time, but if it’s not going your way just don’t give up! Success can only be measured by you, so if you feel like it’s all too much just go a little slower and eventually you’ll get where you want to go.

Easy Homemade Peanut Butter

This documentary right here is currently on Kickstarter, and it’s something I’m very interested in and think other people should be too. I wanted to try to bring a little more attention to it, because there’s only 6 more days to the Kickstarter and it’s so close to being funded!

This documentary highlights the ridiculous amounts of sugars and carbohydrates that have been advertised to us and snuck into our foods for the last several decades. It focuses mainly on the diabetes epidemic that has been spreading and what it is, exactly, that’s causing it. Just click the link and read about it on the Kikcstarter page, they even have a preview of their documentary available!

Now that my weekly advertising is out of the way, I made peanut butter! From scratch! It was super easy too, it only took three ingredients. The recipe I followed called for peanut oil, but like everything in the world I can do it with I substituted coconut oil. I got a super sweet peanut butter that is amazing and 100% pure.

15 oz. unsalted peanuts

1 teaspoon kosher salt

1 1/2 teaspoon honey (or agave nectar, whatever is your thing)

1 1/2 tablespoon coconut oil (or peanut oil)

Alright I lied it took four. Now that trust issues have been formed, put peanuts, salt, and honey in a processor (I use my amazing nutribullet) and blend for about a minute. If it gets stuck shake it around a little (probably don’t do this if you’re using a big blocky processor)

Now add your delicious coconut oil a little at a time. I usually add it in half a tablespoon intervals and blend in between. Soon you will have creamy and delicious peanut buttery confection to add to bananas, breads, oatmeals, smoothies, or everything you eat for the next week.

If You Hate on the Haters Then Aren’t You a Hater?

I read this blog post about Stacy London trying to go on the Paleo diet and it made me laugh a lot. I found myself agreeing with a lot of the same problems when I decided to stop eating certain foods, and her writing was pretty funny and clever. It catalogs her daily thoughts around meals and I was nodding most of the time. I didn’t actually know who Stacy London was until I read this post and it slowly explained it to me, but now I’m just going to remember her as the funny and real Paleo diet girl.

In her blog post, Stacy struggles with what to eat on her new diet. A lot of commenters talk about her being a screw up, and that she is just trying out new fad diets, and she was giving the Paleo diet a bad name because she wasn’t eating properly. But when you start new things you just screw up. That’s how it works. You don’t come out of the womb running and you can’t expect to be excellent at things on your first try.

She talks about wondering if nuts have seasons and how she’s going to be eating nothing but turkey and avacodo for the rest of her life, and I connected with those problems. When I changed eating habits I clung on to the same few foods for quite a few weeks. Hell, I still drink orange juice and seltzer water every single day just because I STILL have a hard time knowing what to drink since I don’t like water.

She also talked about the sweet cravings she would often have. As a sugar junkie I have such insane sugar cravings every single day. I’ll spend an hour just thinking about how much I love donuts and miss coke. Then I eat five oranges and move on with my life, but it’s still a struggle every time it happens.

While it’s true she underrate for most of the days she cataloged, but that was because she was thrust into a new world and almost everything she ate before was taken from her. She had to start from scratch; that means all new groceries, all new recipes, and a no falling back on your old and comfortably known foods. I know I under ate for the first week or two. I had no idea what to eat and how much of it to eat.

I never made any of my own meals before. Everything was either in the microwave or macaroni on the stove. But we both know kraft macaroni doesn’t actually count as food. I am still trying to teach myself to cook from scratch. it’s very hard! You use a lot of dishes! I didn’t know it took so many dishes to cook food! Now I do, but it took a lot of fucking up to figure it out.

So you go Stacy London, don’t let the haters hate.

Blending Everything In Sight With My Nutribullet

So I got a new kitchen utensil (which, conversely, means I have a new favorite thing!) It’s a Nutribullet, and if the name sounds like a familiar, and super awesome infomercial item, it’s because it is! It’s made by the same people that made the magic bullet, but it comes at a price that’s  almost twice as much. Luckily it’s also three times as strong and can blend nuts and seeds into dust. Literally.

Put me in your smoothies I’m nutritious

I’ve been thinking about making almond or apple butter in the nutribullet, since it can apparently do that, but let’s not go crazy yet.

I mostly just wanted something simpler to make smoothies with. My smoothie maker was large, second hand, cumbersome, and a pain to wash. If you remember from my earlier post I’ve been having a ton of unsweetened, natural smoothies. Nutribullet you just blend and rinse and you’re ready for the next smoothie. It’s so much better than the old, ginormous smoothie maker I was using. I just didn’t need that much smoothie at a time; I like to keep my stuff as fresh as possible.

The best way to eat seeds is uncooked, so what better way to implement them into my diet than through the magic of smoothies? That wasn’t a real question, there is no better way. Did you know Chia Seeds 3 times more iron than spinach, 6 times more calcium than milk, and 7 times more vitamin C than oranges? Now you know all those things.

That’s a lot of nutrition in a tiny amount of seeds. If you’re curious what other seeds are a good idea to incorporate into your diet, I used the post and this other post when I went shopping around for seeds to grind up into a fine powder.

I also put kale into every single one of my smoothies, because apparently that’s what healthy people are supposed to do. Have I mentioned before that I’m just winging this? My entire life these past two years has been pepsi and tacos, and before that I was living with a mother that was a chef/nutritionist. I was fed the right things, but I never paid any attention to what they were.

I kind of just buy fruits and vegetables that I think would taste good and blend them into my own abominations. I make a list of the “fruits with most nutritious benefits” or “vegetables that will make you almighty” that I find on the internet/ask my mom about. Then I just grab shit from it and blend. If something is universally accept as nutritious AND delicious I try to throw that in to whatever it is I’m blending at the time.

I’d blend the plate and spoon if my mom told me it would add fiber.

(Healthy) Fried Potatoes, Onions and Eggs!

I have my camera so it’s time to talk about my favorite thing! I get a new favorite thing quite often. I eat this thing daily, and especially after my workout. It’s full of delicious protein to get you going. I’m also going to show you how to make it FAST, because frying potatoes can take forever most of the time.

But here you are, reading the title, and thinking “HEALTHY FRIED POTATOES? BLASPHEMY. FRYING IS THE EPITOME OF UNHEALTHINESS.” And to that I say, yeah it kind of is. But we are frying these things in good fats! We’re frying it in everyone’s favorite coconut oil.

Fats are a requirement for a healthy diet, and coconut oil is one of the best sources of fat out there. We’re also not going to use a lot of it, so it’s all going to turn out A-okay.

For my usual amount, which makes a decent sized bowl but is only enough to feed one person, I use half and onion and half a standard russet potato. Chop up the onions into smallish pieces. You’re going to be eating them, so whatever size onion cubes you enjoy putting into your gullet, cut them into those sizes.

Now peel the potato and wrap it up in a damp paper towel. Put that sucker into the microwave for about two minutes. While that’s being partially prepared heat up a skillet and pour in about half a tablespoon of coconut oil. You’re going to be frying your onions to a delicious caramelized brown in this.

Do that. That was the next step; caramelize those fuckers. Beep beep beep goes the microwave. Your potato is ready to be collected! It is incredibly hot, so don’t take it out with your bare hands (I try to do this every. single. time.) Get it over to a cutting board and cube it up. Again, whatever cube sizes you most enjoy eating. The smaller they are the easier they are to fry.

Now push all your onions to the corners of the pan and add another half a tablespoon of coconut oil. Drop all of your slightly baked, adorably cubed potatoes into the skillet and FRY FRY FRY!! Pour some preferred spices onto your potatoes, I just use salt, pepper, garlic and parsley.  I usually fry them for 3-5 minutes, depending on how hungry I am. Since you microwaved them they’re already soft in the middle, so you no longer have to worry about frying until it’s done all the way through.

Now is time for the egg. This is actually going to be scrambled. In a bowl drop one or two or three eggs. (It depends on if this is post or pre-workout for me) Add just egg whites to the bowl if you want.

Add some milk into the bowl. I don’t actually know why, my mom just always did this when making scrambled eggs so I do too. I use almond milk for this instead of regular milk, so that and soy milk will work just find.

Now get a whisk or a fork and mix that all up. Go back over to the skillet and move all those potatoes out of the way, into the same pile as the onions. They’re in trouble right now. Pour the eggs onto the skillet and add some more salt and pepper if you’d like. Mix the potatoes and the onions into the egg and stir fry them all together. In about a minute your egg should be good looking and your meal is complete!

Does life get any better? No. This is the end of the road. Everything else is going to be a disappointment compared to this.

Bask in your potatoes with a slightly crispy exterior without the bad feelings or surprisingly long amount of time it takes to fry them without using the microwave first.

Soda Stream Into a Healthier Life

Man, do I love coconut oil. I debated talking about the amazing breakfast that I fry in coconut oil and it is my new favorite thing, or my soda streamer that is my lifesblood. I really want to talk about my new favorite breakfast, but my camera is not in hands reach so soda streamer it is!

I have this awesome thing called a soda streamer. You may have heard of it before, it’s pretty popular- especially in  Elder Bearman. This is the one I have!

I have the first and cheapest model. I got it pretty much the year it came out. Actually, in a spur of pure genius, my mom got it for me as a graduation gift. She knew I had an obsession with soda and got this for me as a healthier alternative. I’ve considered getting a nicer one since I’ve been using it for three years, but I don’t really have a need to. This one does everything it needs to perfectly: it makes water fizzy.

What you’re supposed to do with the soda streamer is carbonate your water then add one of their 60 or so flavors to the bottle that you fizz it in. I find their bottled flavors a little too processed and a little too gross. Honestly you might as well just be drinking regular soda, except this soda is grosser.

What I like to do is fizz up my water and pour it into a glass. I use about 2/3rd carbonated water, then I add some 100% fruit juice. I’ve mixed unsweetened tea into too, and really I’m going to think pretty much anything carbonated is great so I’m a little biased.

I think I mentioned my soda addiction before. I usually had about three or four cans of it a day minimum. I knew if I wanted to feel better I was going to have to stop drinking it all the time. So I did, I stopped cold turkey. Luckily I had this lovely beauty to keep me from dying of dehydration.

I have never been good at drinking water. Tap water makes me gag. It might have to do with some seriously bad tap water fro our city I experienced a lot when I was little. I can drink filtered water, but I hate it and it needs to be ice cold or I am supremely unhappy. However, I am completely capable of drinking seltzer water. I am especially capable of drinking seltzer water with juice mixed in.

If you find yourself having trouble cutting soda from your diet, this is the way to go. This completely satiates every craving I have for soda. It’s a great alternative, and a healthy alternative. Not just for you but for the environment too. I would fill garbage bags with cans and plastic bottles, but I don’t anymore!

My friend told me mixing syrups and juices with the seltzer water was called Italian Soda. I’d never heard this term before, but I sound so gourmet now.

My Life is Smoothies

I tried to get a donut on my way to work. In a moment of weakness I couldn’t take the lack of baked goods any longer. Justin was driving, and I asked him to make the turn off to the exit that leads to soft, delicious donuts. He proceeded to shout “I’LL BE YOUR ROCK” over my pleas for donuts until we passed the exit. He’s a good man.

But that is not the theme of today. The theme of today is smoothies, and how they have pretty much replaced everything else in my life recently. They’re so easy to make and they fill me up. I just drop in some peaches, yogurt and ice in a blender then chop it up until it’s all liquid. Can life be any easier?

I made a tropical blend too out of frozen fruits. It was mango, pineapple, strawberries, and delicious. I pretty much poured everything in the fridge into this one; yogurt, orange juice, almond milk. It was really good but significantly more difficult to make than the one that’s just peaches and yogurt.

Yesterday my friend showed me an ice cream maker that was exactly the same one I had been looking at before while I was in Target. You just put some fruits in and it makes a sorbet. I want one. Especially with how obsessed I’ve been with smoothies recently. I’ve been trying to cure my sweet tooth and smoothies was a great idea, but this will also help me cure my ice cream craving.

I’ve been considering just getting a multi-purpose juicer that also makes sorbets from fruits. A juicer is something I have recently felt needs to be in my life, so this would be a great way to kill two birds with one stone.
